Back to Zumba

I ate really good today, and did my 1 hour Zumba class!  Yay!

For lunch I had some rice pilaf, and for dinner BF made us grilled chicken breasts and broccoli.  Just got back from Zumba and although it felt like it was a thousand degrees in there (no A/C yet), I did it and I feel great!  Feels so good doing Zumba again.

I may even start going to the gym with BF on my non-Zumba days.

I don't think I'll be losing weight this week...

So, my birthday is Sunday (yippy.) and tonight we have to go to my parent's for a birthday dinner and they always get me a Carvel Ice Cream cake.  I *love* Carvel cakes, but I was trying to be so good!  I did good last week but I think this week it's going to be a bust.  Not only is my mom making a not-so-diet-friendly dinner and having ice cream cake, but my boyfriend said we're celebrating my birthday all weekend, starting with Friday.  So dinner out Friday AND Saturday, and who knows what else is in store food-wise.  I'm positive there will be desserts in there somewhere. I might as well just take the food and tape it to my butt, thighs and tummy because that's where it will end up!

Next week I'm going to be STRICT about my diet AND exercise!  I really wanted to go to Zumba last night but it was cancelled yet again due to the heat.  Maybe tomorrow...... sigh...

Zumba cancelled again!

Was looking forward to going to Zumba tonight, and just found out it was cancelled AGAIN, due to the heat! Boo!  When will this heat wave be over?

Week #1 - lost 1.5 lbs

Well, today is my weigh-in day, and I am officially down 1.5 lbs!  It's just from eating healthy.  Zumba was cancelled all week because of the heat (they are installing A/C) so since it's too dangerous to workout in this heat, they cancelled Zumba.   Hopefully it will be cooler next week so I can get back into Zumba again!

Italian marinated Chicken with broccoli


Did you know that italian salad dressing is a delicious marinade?  I have used it on beef (stew meat) and chicken, and it's delicious on both!

This dinner looks like a chinese dinner, but tastes even better!  (So says my BF!)

  • Cut up chicken breasts (I do 1 per person)
  • Fry the chicken in a pan, and add about 1 cup of italian dressing (more or less depending on how much chicken you are cooking)  let the dressing absorb into the chicken!  Personally I only use Wishbone italian dressing, but any kind you like will do!
  • Cook the chicken until it's done, but before you're done, add a little more italian dressing and put it on high heat for a couple of minutes to "glaze" the chicken.
  • You can add the broccoli at this time too - but I prefer to cook the broccoli in the toaster oven or broiler for about 20 minutes just sprayed with olive oil and a little salt, and then add it when it's done.
  • I also cook brown rice in a separate pan while my chicken is cooking.  When done, I put the rice in the bowl, then the chicken & broccoli.  
This dish is so yummy!!  BF requests it at least once a week.  

Turkey burger w/veggies, and Alexia!



BF's luch:  Turkey Burger on wheat toast, and Healthy Colors Steamed veggies by Green Giant.  He did add mayo and a slice of 2% cheese to it.  He loved it and wants this again tomorrow for lunch!


My lunch:  Again, my Alexia Saute Reds.  10 points for the bag.  Minus the onions.  Yuck!
